This easy beef high protein soup is going to make you feel warm in all the right places. I sometimes wonder why people think that making soup is such a hassle. The way I see it, mirepoix, stock, protein and BOOM! You’re done! If you feel intimidated by soup, I encourage you to give this a try. 

First of all, you know those beef stews that take at least an hour simmering away (and I’m being generous here) thick, full of winter vegetables? Yeah, this is not it. This is a quick beef soup that can be done in less than twenty minutes. 

Timesaver

It’s still tasty, filling and yummy, it just doesn’t take all evening to make and it doesn’t give you a food comma after eating it. The key here is using the shaved meat. It’s the one used for Philly cheesesteak so it’s been frozen and sliced thin on an industrial slicer, weighed and packed at 6oz (I believe). This will cut cooking time in no time flat.

Pro tips

I used a little bit of leftover salsa (as you can see in the video) I had made chilaquiles that morning so I figured…”why not!” but an alternative would be ANY type of salsa you have, Tabasco maybe or Tapatio. Yum!

You can use any homemade beef stock but I recommend Better Than Bouillon Roasted Beef flavored for this recipe. For the beef I really like the one you can find in the freezer section of your market. If you are going to use something thicker it will take longer to cook. It looks like this.

Ingredients

  • 28 grams Celery
  • 33 grams Carrots
  • 25 grams Onion
  • 4 grams Ghee
  • 3 grams Garlic paste
  • 6 grams Better than bouillon Beef flavored
  • 224 grams Shaved sirloin

Instructions

    1. Chop your veggies into small pieces
    2. In a small pot, melt the ghee and cook the veggies until soft
    3. Add the beef bouillon that has been previously mixed in water
    4. Season it with the Italian seasoning, white pepper and salt to taste
    5. Let it boil. Add the shaved meat but make sure is defrosted already
    6. Once it boils again and the beef has been cooked, turn it off because you do not want to over cook the beef, it will make it dry
    7. Serve in a bowl and enjoy! Add hot sauce or lime juice to enhance its flavor.
